Bam’s Cauliflower Tacos

Man, these are in the running for possibly some of the best tacos I’ve ever had. I paired the cauliflower up with a homemade fajita season and roasted them until tender. It’s really simple to make and would make everyone in the house that you prepare this for love you even more. If they don’t love you more, let me know and me and that person will have a heart to heart discussion.

Even though the ingredient list looks like a lot, it’s not at all. I always make the fajita seasoning ahead of time and keep it stored for times like this. You’re more than welcome to purchase some store mix if you are pressed for time. As with the green sauce, it’s just throwing everything in a blender and blending it to your desired consistency.

 

Ingredients

  • 1 Head Cauliflower
  • Tortillas
  • 2 Tbsp Olive Oil

Fajita Seasoning

  • 1 Vegetable Bullion Cube (optional, but recommended)
  • 2 Tbsp Chili Powder
  • 1/2 Tbsp Cayenne Pepper
  • 1 Tbsp Cumin
  • 1 Tbsp Onion Powder
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Paprika
  • Dash of Salt/Pepper
  • 1 Tbsp Coconut Sugar (or reg. sugar)

Avocado Green Sauce

  • 1 Avocado
  • 1 Jalapeño
  • Handful Cilantro
  • 2 Cloves of Garlic
  • 2 Tsp of Cumin
  • Salt/Pepper
  • 1 Scoop Vegan Mayo
  • Water

Toppings

  • Red Cabbage (Shredded)
  • 1 Carrot (Shredded)
  • Cilantro (Finely Chopped)

Directions

 

  1. Preheat oven to 425.
  2. Combine all ingredients for fajita seasoning in a small bowl and mix well. You will have extra.
  3. Wash and chop cauliflower head into bit size pieces. Add olive oil and about 2 tbsp of fajita mixture. Add more seasoning if desired. Bake for 25-30 min, or until they are starting to brown.
  4. While cauliflower is roasting, combine all ingredients for the green sauce in a blender EXCEPT THE MAYO AND WATER. Once thoroughly blended, remove from blender and add about a spoonful of mayo and 1/4 cup of water. Mix with spoon until smooth.
  5. Prepare your toppings .
  6. Plate your tortillas, add the green sauce, pile on cauliflower, garnish.
  7. Enjoy.
  8. Clean Up.
