Baked Eggplant Sandwich


Another dope recipe, this sandwich is simple and full of flavor. Eggplant is always cool to work with because it’s flexible and can be used in so many ways. Full of benefits ranging from aiding in digestion to helping to improve brain function, it’s not a bad food to experiment with at all! It soaks up flavor really well and can be used to give your dishes texture. You can pair this sandwich with whatever you want, I chose to go with sweet potato fries.




  • 1 Eggplant
  • 1 Avocado
  • 1 Tomato
  • 1 Red Onion
  • 1 Cup Spinach
  • 2 Slices of your favorite bread. ( I use Dave’s Killer Bread)

Chipotle Mayo

  • 2 Tbsp Vegan Mayo
  • 1 Tbsp Adoba Chipotle Sauce
  • 1 Tsp Cumin Powder
  • Salt/Pepper to taste


  • 2 Tbsp Low Sodium Soy Sauce
  • 1 Tbsp Pure Maple Syrup
  • 2 Tsp Liquid Smoke
  • 2 Tsp Orange Juice
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Cayenne Pepper
  • Salt/Pepper to taste


  1. Preheat oven to 415. Cut eggplant into strips and place on nonstick baking sheet (or use parchment paper.
  2. In small mixing bowl, combine ingredients for marinade and brush evenly lover eggplant strips front and back. Let marinade in fridge for 10-15 minutes (Optional)
  3. Bake eggplant strips for 15 min. Flipping halfway through cooking time. Eggplants can be baked to your desired crispiness. JUST DON’T BURN EM’!
  4. While eggplants bake, sauté red onion in small skillet. Also combine ingredients for chipotle mayo in small bowl and mix until combined.
  5. Prep your avocado and tomatoes.
  6. Remove eggplants from oven.
  7. Assemble sandwich at once. On bread, layer on the chipotle mayo, spinach, baked eggplant, tomato, avocado, and sautéed onion
  8. Grill sandwich, add a little vegan butter to skillet and brown on each side.
  9. Enjoy greatness.
  10. Clean up after yourself!
