Here’s a simple recipe concept to hold you over, because I love y’all. It’s filling, flavorful, and pretty cool to look at. You can plug in your favorite fruits and toppings. Get creative.
Side note: I have a homemade granola recipe I use for this recipe. I’ll make the post and link it here whenever I make it again.
Ingredients
- 1 Large Sweet Potato
- Blueberries
- Coconut Yogurt
- Strawberries (Quartered)
- Almond Butter
- Granola
Directions
- Preheat oven to 425. Place sweet potato directly on the rack and place aluminum foil/pan on bottom rack to catch drippings. Bake for 45 min or until tender.
- Remove from oven, split down the middle, and add toppings. Drizzle yogurt, add fresh fruit, granola, and almond butter drizzle.
- Enjoy. Clean up after yourself!
